MY PANCAKES WERE A SUCCESS!!

Last saturday morning Ms E and I experimented with making flapjacks for breakky. Initially they came out as flatjacks instead - uninspiring little buggers, only about 1mm in depth (think: thosai). Bah…

Then in a stroke of pure accidental genius, I remembered having a round metal mould in some godforsaken part of the kitchen that we could use to contain more batter without it spreading out too thin on the pan.

Of course now that the kitchen is well-organised, it took less than a minute to locate that little mould. And to my surprise, I found 2 moulds – one heart-shaped and one round-shaped – all shiny cleaned and ready to be used. *double thumbs up to Ms E*

So we put the mould on the hot pan and poured the batter into it. Wahla! We now had thick and perfectly round (and heart-shaped) pancakes that were at least 1 cm in depth.

The feeling of sinking your teeth into wonderfully thick and moist pancakes, accompanied by pure fragrant Canadian maple syrup and a generous slather of butter, was just simply… heavenly.

On top of pancakes, we also prepared herb sausages and fresh tomatoes to complement the dish.

And the best compliment came from hubs when he mopped up his share, savouring each bite. He’s usually not a pancake lover :)

  2. Just a tip: I find that increasing the proportion of milk and reducing the amount of water for the batter makes it thicker and less likely to spread in the pan. And the best part is that the pancakes rise to become nice and thick :)
